It's because they can be asymptomatic carriers and unwittingly pass it on to someone vulnerable (or the rest of the lockerroom). The tests take days to come back, holding them out is their protocol. Further, we don't know their medical history to the full extent so saying it's not dangerous to them in a cavalier manner is naive. I won't even respond to the car accident line. The trouble with the internet is exactly posts like this, people trying to come across as confident when their posts are full of falsehoods and no easy means of fact-checking.

What I'm saying is that it's stupid protocol.
Holding players out because there's a chance that they may be asymptomatic carriers of a virus, and if so there's a chance they may pass the virus (asymptomatic carriers are less likely to do so), and if so there's a chance that it may end up being someone vulnerable (almost zero-- knowing the Dillon had it, they can obviously avoid vulnerable demographics), and all of that regarding a virus that has a .02% chance of being deadly to the general population (smaller chance for healthy NFL players)... that's incredibly stupid.
If that kind of risk is too great to allow them to play, then statistically no player should ever play any game at all. Because altogether, that's infinitesimal.
If I'm so full of falsehoods then I would imagine you could point some out. I would say the real problem with the internet is that it's replete with fascistic jerks who think opinions they disagree with should be censored because they don't like them.
